Travis Owens, Curio at Harvest

Travis was the first brave soul to enter the Bar Bet thunderdome, and green onion was not an easy IMG_9805place to start. Owner of the impossibly cool cocktail den Curio at Harvest, Travis has a knack for making any ingredient feel at home in a glass, and for making everyone sitting on his barstools feel like they’ve found home away from home. Green onion verdita might not be familiar to most, but you’re gonna want to make a huge batch of this because people will be back for seconds and thirds.

The Greenhorn

1 oz. Vida mezcal

1 oz. Rhum J.M.

.5 oz. Combier

1.25 oz. Green Onion Verdita*

.5 oz. lime juice

Green onion straw

Shake with ice and strain over crushed ice in a large glass. Garnish with a tiny umbrella.

*Green Onion Verdita

12 oz. fresh pineapple juice

8-9 sprigs of mint

2-3 small green onions

One-quarter Of a seeded jalapeño

6 Kaffir lime leaves

Juice of 2 limes

Blend ingredients and strain through a fine mesh strainer.
