Goodness by the Bunch

If you think of hippie vegans who sing songs around trees in their gluten-free tunics while munching on weirdo-looking “chips” when you hear the word “kale,” then you aren’t alone. Kale has gotten quite the interesting rep these days, although delicious and healthy should be the number one new thing you think of when you think of kale.

If you’ve never tried kale before, for whatever reason, now is the time. It is chock full of vitamins, minerals and loads of other phytochemicals that have yet to even be identified. Kale is delicious in a ton of different ways, but chip form is definitely the way to start.

Below are a bunch of kale chip recipes you can make with a bunch of kale, complete with suggestions on how to use them in your everyday favorite foods. By introducing kale this way, you and your entire family can test the kale waters without feeling like you are eating rabbit food or living on a commune.

Basic Kale Chips

Ingredients:

1 bunch kale

1 tablespoon olive oil

Salt

Directions:

1. Set the oven to 375 degrees.

2. Pull the leaves off the stems of the kale. Tear apart into smaller chip-sized pieces.

3. In a bowl, toss the kale with the olive oil to coat the chips evenly.

4. Arrange the chips in a single layer on a baking sheet. Sprinkle with salt.

5. Bake for 10-15 minutes, or until golden brown and crispy.

How to Use: Eat these by themselves for a healthy snack, sprinkle your favorite soups with a handful or add to your salads instead of croutons.

The Godfather Kale Chip

Ingredients:

1 bunch kale

1 tablespoon olive oil

2 tablespoons grated parmesan cheese

1 tablespoon dried oregano

Directions:

1. Set the oven to 375 degrees.

2. Pull the leaves off the stems of the kale. Tear apart into smaller chip-sized pieces.

3. In a bowl, toss the chips with olive oil, parmesan and oregano to coat them evenly.

4. Arrange the chips in a single layer on a baking sheet.

5. Bake for 10-15 minutes, or until golden brown and crispy.

How to Use: These chips will complement all your favorite Italian dishes! Sprinkle them on top of grandma’s famous spaghetti sauce, add some color to your fettuccine alfredo or layer in between your lasagna noodles for a delicious crunchy surprise.

Great Grill-topper Kale Chip

Ingredients:

1 bunch kale

1 tablespoon olive oil

2 tablespoons jerk OR Cajun OR seasoned salt seasoning blend

Directions:

1. Set the oven to 375 degrees.

2. Pull the leaves off the stems of the kale. Tear apart into smaller chip-sized pieces.

3. In a bowl, toss the chips with the olive oil and seasoning blend to coat them evenly.

4. Arrange the chips in a single layer on a baking sheet.

5. Bake for 10-15 minutes, or until golden brown and crispy.

How to Use: As the grills start to roll out, these chips should start to come out, too! Top all of your favorite grilled steaks, pork chops, chicken breasts, fish, etc. with these crunchy goodies right before serving. The color and flavor combination will amaze all your barbeque guests.

The Cinco de Mayo Kale Chip

Ingredients:

1 bunch kale

1 tablespoon olive oil

1 tablespoon chili powder

½ tablespoon cumin

Directions:

1. Set the oven to 375 degrees.

2. Pull the leaves off the stems of the kale. Tear apart into smaller chip-sized pieces.

3. In a bowl, toss the chips with the olive oil, chili powder and cumin to coat them evenly.

4. Arrange the chips in a single layer on a baking sheet.

5. Bake for 10-15 minutes, or until golden brown and crispy.

How to Use: Add kale goodness to your fiesta by adding these to your homemade tacos, stir them into your salsas and smash them between whole grain tortillas and your favorite quesadilla ingredients.

Kale Chips for Dessert

Ingredients:

1 bunch kale

1 tablespoon canola or vegetable oil

1 tablespoon sugar

1 teaspoon cinnamon

Directions:

1. Set the oven to 375 degrees.

2. Pull the leaves off the stems of the kale. Tear apart into smaller chip-sized pieces.

3. In a bowl, toss the chips with the oil, sugar and cinnamon to coat them evenly.

4. Arrange the chips in a single layer on a baking sheet.

5. Bake for 10-15 minutes, or until golden brown and crispy.

How to Use: Just trust me here! Add these to the top of your favorite ice creams or frozen yogurts, mix them with fresh berries or fruit salad or make a delicious Greek yogurt parfait.
